Easy Meals: Rotisserie


Ben and I are big fans of picnic meals, as in you-don't-have-to-prepare-much-and-they're-largely-made-of-cheese, so we're always looking for expanded easy picnic dinner options. Rotisserie chicken, often in abundance at every supermarket and super inexpensive ($5 at Safeway on Fridays), is a perfect option for making simple but delicious meals. Below is one adventure in rotisserie that'll hopefully spark some ideas for your meals!







A big loaf of local sourdough white, Stubbs barbecue sauce, greens, and a rotisserie chicken are all you need for super quick and really delicious barbecue chicken sandwiches. We got our rotisserie chicken from our local market that has their own smokehouse and it was delicious. Ben sliced it up, and we plopped the juicy slices of chicken breast on warmed up sourdough and voila, add a cocktail and Friday night is in the bag. Other ideas for rotisserie chicken? Pasta salad with chicken, chicken wraps, and outdoor picnics with cold brews and honey dijon chips. Say yes to easy! 

In other news, I just booked tickets to return home to Hawaii in July. Ben and I will be taking a ten day vacation, staying on the Kona coast of the Big Island for a few nights and then driving over the mountains home to the windward side of the island to see my family. I haven't been home in about two and a half years, so it should be nice to smell the warm air and see my dog! Can't wait to get a whole set of outfit photos from the warm islands - I think I need to plan my wardrobe in advance.
