Salmon with Dill and Lemon


I came home from work on Friday night to discover Ben lying prostrate on the floor in agony - he tweaked his back at the grocery store planning a romantic evening for us. He'd planned on having a salmon dinner ready and then heading down to the little independent theatre down the street to watch Quartet. Unfortunately, at 5 p.m. he couldn't move and without anything else to eat, I had to make the dinner he'd planned. I know I've already said that I'm not a great cook, but with some expert guidance I can usually turn out an okay meal! Below is Ben's amazing salmon filet with lemon and dill that I cooked Friday night for us. It turned out delicious and moist, so I'll consider it a success. Keep reading for the recipe!








Salmon with Dill and Lemon

You'll need:

1 salmon filet
Olive oil (enough to brush the salmon with)
Fresh dill, a few tablespoons chopped finely
2 small-medium lemons, in 1/8" slices
Kosher salt, two pinches
Pepper, to taste

Preheat the oven to 350. Rinse the salmon filet to remove any scales and then pat dry with paper towels before laying on a generous sheet of foil on a baking tray. Drizzle some olive oil on the filet and rub in. Next, mix together the chopped dill, two pinches of kosher salt and pepper to taste and sprinkle it over the filet (try not to drool at the smell of the dill). Then cover the dressed salmon with lemon slices - they'll keep in the moisture leaving your salmon perfectly done. Pack up the filet in foil tightly and place into the oven for 20 minutes. Voila! Perfect salmon that smells heavenly.

To complete the meal, we cooked up some great garlic and herb pasta and I whipped up a butter and lemon sauce for some fresh, steamed broccoli. One of the highlights of the meal was uncorking Ben's latest homebrew (an IPA) and finding that it tasted absolutely delicious. It can be a bit hit or miss with homebrew but this one was spot on. We double-fisted dinner with a bottle of Whidbey Island Pinot Gris and the IPA which made for a totally lovely night.
