When I had finally risen from the dead on Saturday evening, Ben and I wanted to have some crackers but were out and deep into a show. I figured that we had the three necessary ingredients for homemade crackers - water, flour, and salt. So we set out to find a recipe that didn't call for something obscure (aka was limited to the three ingredients above). We found the following recipe and I've added my suggested modifications - please note, they're also vegan!
Rosemary Crackers with Olive Oil and Garlic
1 cup whole wheat flour
1 tsp baking powder
1-2 teaspoons fresh (or dried) rosemary
1-2 teaspoons garlic powder
1/2 tsp pepper
1/4 cup olive oil
3 tablespoons water
sea salt and fresh cracked pepper for sprinkling*
(The original recipe calls for salt in the dough, but these turned out too salty for me! So I've remove it)
Preheat the oven to 375 degrees.
Mix flour, baking powder, rosemary, garlic and pepper in a medium mixing bowl. Add olive oil and water, stirring (or in mixer) until well blended. If dough is dry, add a tablespoon of water. If too wet, add a pinch of flour. Your dough should be crumbly.
Flour a surface and roll the dough out thin with a rolling pin. Cut out rounds with a cookie-cutter or a drink glass and place on parchment lined baking sheet. Sprinkle sea salt and pepper on the tops, taking care not to use too much (like we did) and make holes in the dough with a fork before baking. Bake crackers for about 14 minutes until golden and crisp. Let them cool, remove, and serve with butter, salami, cheese, spreads!
