Happy Hour: Newly Minted


Ben and I have been on a summer cocktail kick recently - fresh citrus, sugared rims, and icy beverages. What's wrong with playing a little pretend in the chilly months? Those with a polar vortex (and revenge of the polar vortex) and probably shivering in their North Face jackets right now wishing I'd shared a hot toddy recipe instead... but too bad folks, the sun is shining in Portland this week and the highs are getting to 50 degrees. Celebratory summer cocktails are in order!



You'll need:

Juice from 1 lemon
2 cups of lemonade
3 shots of Absolut citron
Eight mint leaves

(Serves 2)

Muddle eight mint leaves at the bottom of a shaker. Add ice, the juice from one lemon, two cups of lemonade, 3 shots of Absolut citron and shake until the shaker is frosty. Strain the cocktail into two glass and add a straw for fun. Think about summertime and enjoy.

  4. I have to admit that a hot toddy recipe does sound good right now. :) It's going to be in the single digits on Monday/Tuesday where I live, and I've been living on coffee/hot tea/hot chocolate.
