Three-Ingredient Picnic

Oregon has the most insanely sporadic weather. This weekend, during this glorious reading, napping, maxi-dressing, Outshine-Simply-Yogurt-bar-eating afternoon, it was 84 degrees and we needed to lay out in the shade to keep cool. Today, it was miserably blustery, sprinkling rain, and in the high fifties/low sixties. Our weather is nuts. And that usually means that you need to be outfitted for absolutely anything that comes along. For a walk to work, I usually carry a rain jacket, pair of shoes that don't mind getting soaked, and wear a fleece or down jacket. No matter the season, a downpour, a hailstorm, a windy day, or a sopping walk can crop up at less than a moment's notice. In the same vein, you can start a day in the pouring rain and emerge from work into a hot, beautiful day. And you need to take advantage of those beautiful moments here in the Pacific Northwest.

In order to be fully prepared for any beautiful moment that could pop up, we like to have a three-ingredient picnic on hand. With the right supplies, we can run down to the waterfront outside of our house. For this particularly perfect (and easy) picnic, we like to stock up on Outshine bars from Walmart, get a good book that we've been meaning to read, and a big outdoor blanket. If you have other things on hand, like fresh fruit and sparkling water, all the better. But all you need for a beautiful day, laying out in the sun (besides sunscreen), are some delicious cool treats to snack on and a great book. Ben and I recently discovered some new Outshine bars like the Simply Yogurt bars (in addition to their already awesome line-up of Outshine Coconut Water bars, Outshine Fruit and Veggie bars) and they've taken over our entire fridge in hopes of more days that are 84 degrees. Their lemon bar used to be my go-to snack for the summertime (it's a super refreshing snack for the hot summer days when you don't want to load on ice-cream calories!), but the peach Simply Yogurt bars that we picked up for this picnic stole the show. Ben and I fought over the box of bars a bit too intensely.

  1. Those looks so delicious and refreshing! I feel like Northern California is acting like Oregon right now...we had gorgeous weather, then rain for one day, then warm weather, and now it's supposed to rain again. lol. My family goes to Oregon three to four times a year and I haven't been able to go the past couple years. But I finally get to go in July and can't wait! We go to the Coos Bay area to ride in the sand dunes :)
