Portland offered a sweet respite from the 90+ degree temperatures this past week. The mid-70s to 80s were feeling cool and much-needed, but that didn't stop us from working on our cool cocktails. Ben has been buying watermelon every time we go to the grocery store and I only like the harder, pink edges of the watermelon (I have a texture thing) and not the very ripe and often mushy center. I know, I'm odd. With a fridge full of watermelon, we needed to dispose of some of it to make room for other things like: beer. Ben decided to try his hand at crafting a watermelon cocktail with some awesome Hussong's tequila we recently picked up (highly recommend).
This highly addictive cocktail was born and I couldn't not share it with everyone else. Don't let summer slip by without juicing up a watermelon and turning it into a margarita-martini-whatever-this-is. Recipe following more mouth-watering photos!
You'll need:
1.5 oz of tequila (1 shot)
2 oz oz watermelon juice
.75 oz of lime juice
1 dash of angostura bitters
1 tsp-1 tbsp simple syrup (to taste)
Watermelon slice for a garnish
First, chop up your watermelon into small cubes. Muddle/squish/smush/whatever until you've extracted some juice. Strain the watermelon through a fine strainer or a coffee filter to collect the watermelon juice.
In a shaker full of ice, combine shot of tequila, watermelon juice, lime juice, bitters, and sugar to taste. Pour into the vessel of your choice and enjoy with a watermelon garnish!
