On the Menu: Homemade Bailey's

Last weekend my friend Caitlin came down from Tacoma for our annual gift exchange and to attend our annual Christmas party. It is so good to see old friends that you're comfortable with, that you don't need to make small talk with, and that you can comfortably sit on the couch napping with for hours. All in all it was a successful, if frigid, Portland weekend.

On Sunday, I drug her to a work party that was also a Stella and Dot jewelry party where we were both sold on some gorgeous jewelry (naturally! What blogger goes to a S&D party and walks out empty-handed?!). But we were also introduced to homemade Bailey's. The woman that made it told us that it was so simple we'd never need to buy it again. She wasn't lying. Needless to say on the way home we stopped at Safeway and ran in to get the ingredients. Amazingness ensued. If you're a fan of cream, chocolate, whiskey, coffee, and/or the holidays, keep reading. If you're not a fan of any of the above? There's no hope.

You'll need:

1 c. heavy whipping cream
14 oz sweetened condensed milk
1 c. Irish Whiskey (I actually just used Jack Daniels)
1 tsp. instant coffee (try: Medaglia D'Oro)
2 tablespoons Hershey's chocolate syrup
1 tsp vanilla

Combine all of the ingredients in a blender. Store in an airtight container in the fridge and the Bailey's will keep for up to 2 months (so the internet says).
