Sparkling White Sangria

Is there anything more appropriate than pink drinks in the summertime heat? I think not! I came home the other night to this gorgeous pitcher of sangria, a la Ben. The bright pink color came entirely from some strawberries marinating in the white wine and vodka all day long. Adding sparkling water and ice made it look like a pink lemonade or light blush wine in the glass. So festive and so delicious.

I'm not normally a sangria fan - not one for fruits marinating about in my vino - but this cocktail was absolutely sparkly and delicious. It was not too sweet, not too dry, not too fruity, not pulpy. Just right. Like Goldilocks' cocktail. It's super simple to make and easy enough for your end of summer entertaining and barbecues. Read on for the easy recipe!

You'll need:

1 bottle of dry riesling
1 peach, cubed
2 nectarines, cubed
2 limes (wedges) + juice from 1 additional lime
Handful of strawberries (sliced)
1/2 c. vodka
Sparkling water

Combine fruit with dry riesling and vodka and let sit for one day in a covered container. Pour over ice until glass is half full. Top off with sparkling water and mix. Enjoy!
